Baked Tilapia with Parmesan-Sour Cream Sauce
INGREDIENTS:
1 1/2 lbs. tilapia fillets
1 package (8 oz) sour cream
1/4 cup shredded Parmesan cheese
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. Italian-seasoned breadcrumbs
2 Tbsp. margarine, melted
PREPARATION:
1. Preheat oven to 350°F.
2. Place fillets in a single layer in a lightly greased 13x9 inch pan.
3. Stir together sour cream, parmesan cheese, paprika, salt, and pepper.
4. Spread evenly over tilapia. Sprinkle with breadcrumbs and drizzle with butter.
5. Bake for 20-25 mins or until fish flakes with a fork.
6. ENJOY!
Beef Tips
INGREDIENTS:
1 package sirloin tips
1/2 cup Dale's sauce, low sodium
2 cups water
PREPARATION:
1. Brown sirloin tips in a skillet.
2. Put the tips in a Crockpot and add Dale's sauce and water.
3. Let cook for 3-4 hours minimum.
4. ENJOY!
**Serve on rice, mashed potatoes, or stir fry veggies
Cream Cheese Taquitos
INGREDIENTS:
2 cups shredded, cooked chicken
1 cup shredded cheese
small flour tortillas
3 oz. cream cheese, room temp.
1/4 cup salsa
1 Tbsp. lime or lemon juice
1/2 tsp. ground cumin
1 tsp. chili powder
2 cloves garlic, minced
1/4 of onion, chopped
salt
cooking spray
*Optional: 3 Tbsp. cilantro
PREPARATION:
1. Preheat oven to 425°F.
2. In large bowl, mix cream cheese, salsa, lime juice, ground cumin, chili powder, onion, and garlic.
3. Add cilantro, if wanted. Then, mix in the shredded chicken and cheese.
4. Soften tortillas in the microwave for 10 seconds.
5. Put mixture in the tortillas and place taquitos seam side down in pan or cookie sheet.
6. Spray the tops of the taquitos lightly with cooking spray and sprinkle with kosher salt.
6. Bake for 15-20 mins or until crisp and golden.

Lydia's Lasagna
INGREDIENTS:
1 lb. ground beef or turkey
1 package lasagna noodles
ricotta cheese
cheddar cheese
cottage cheese
1 jar Ragu sauce
PREPARATION:
1. Preheat oven to 375°F.
2. Brown ground beef or turkey and drain then add Ragu sauce.
3. Cook the noodles.
4. Layer everything, starting with the sauce.
5. Cook in the oven for 30 mins.
6. ENJOY!
Taco Ring
INGREDIENTS:
3/4 lb. ground beef or turkey
1 package taco seasoning
1 cup shredded cheddar cheese
2 tbsp. water
2 packages crescent rolls
PREPARATION:
1. Preheat oven to 375 °F.
2. Cook ground beef or turkey and drain.
3. Put the meat back into the pan and mix taco seasoning, cheese, and water together.
4. Unroll the crescent rolls. Fill with mixture and fold over.
5. Bake 20-25 mins in the oven.
6. ENJOY!
**Garnish with fresh lettuce, tomato, and sour cream for an even better taste!

Shepherd's Pie
INGREDIENTS:
1 lb. ground beef or ground turkey
1 can tomato soup
1 can green beans
1 box of mashed potatoes
butter
PREPARATION:
1) Preheat oven to 350°F.
2) Brown your meat in a frying pan.
3) Make 4-6 servings of mashed potatoes (follow recipe on box!) in a round deep dish bowl.
4) Put one layer of these ingredients in your oven-safe dish: 1/2 of your meat, whole can of green beans, 1/2 of tomato soup.
5) Put other 1/2 of meat then other 1/2 of soup on top of that layer.
6) Add mashed potatoes on the top. With a spoon, make a few indentions in the potatoes and put a small amount of butter in each one.
7) Bake in the oven for about 30 mins.

Lazy Baked Greek Chicken
INGREDIENTS:
2 tbsp. extra-virgin olive oil
3 tbsp. butter
1/2 medium onion, chopped
3 large cloves garlic, chopped
1/2 cup crumbled Greek feta cheese
1 cup breadcrumbs
1 (10 oz.) box chopped spinach, thawed
4 pieces boneless, skinless chicken breast
nutmeg
salt & pepper
oregano
PREPARATION:
For Stuffing:
1) Preheat oven to 425°F
2) Add extra-virgin olive oil to pan over medium heat.
3) Add onion and 2/3 of the garlic into pan. Cook until softened (3-4 mins).
4) Transfer to bowl and add spinach. Season with salt, pepper, and nutmeg.
For Chicken:
1) Melt butter in previous pan. Turn off heat and add the breadcrumbs and oregano.
2) Drizzle a casserole/cooking dish with the remaining olive oil.
3) Cut each chicken breast horizontally, leaving a place for the stuffing. DO NOT cut each chicken into two separate pieces.
4) Stuff each chicken breast with the spinach stuffing and feta cheese, letting it overflow.
4) Place the in the cooking dish and sprinkle with breadcrumbs.
8) Bake about 20 minutes or until chicken is fully cooked.
