Lazy Baked Greek Chicken
INGREDIENTS:
2 tbsp. extra-virgin olive oil
3 tbsp. butter
1/2 medium onion, chopped
3 large cloves garlic, chopped
1/2 cup crumbled Greek feta cheese
1 cup breadcrumbs
1 (10 oz.) box chopped spinach, thawed
4 pieces boneless, skinless chicken breast
nutmeg
salt & pepper
oregano
PREPARATION:
For Stuffing:
1) Preheat oven to 425°F
2) Add extra-virgin olive oil to pan over medium heat.
3) Add onion and 2/3 of the garlic into pan. Cook until softened (3-4 mins).
4) Transfer to bowl and add spinach. Season with salt, pepper, and nutmeg.
For Chicken:
1) Melt butter in previous pan. Turn off heat and add the breadcrumbs and oregano.
2) Drizzle a casserole/cooking dish with the remaining olive oil.
3) Cut each chicken breast horizontally, leaving a place for the stuffing. DO NOT cut each chicken into two separate pieces.
4) Stuff each chicken breast with the spinach stuffing and feta cheese, letting it overflow.
4) Place the in the cooking dish and sprinkle with breadcrumbs.
8) Bake about 20 minutes or until chicken is fully cooked.
