Baked Tilapia with Parmesan-Sour Cream Sauce
INGREDIENTS:
1 1/2 lbs. tilapia fillets
1 package (8 oz) sour cream
1/4 cup shredded Parmesan cheese
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. Italian-seasoned breadcrumbs
2 Tbsp. margarine, melted
PREPARATION:
1. Preheat oven to 350°F.
2. Place fillets in a single layer in a lightly greased 13x9 inch pan.
3. Stir together sour cream, parmesan cheese, paprika, salt, and pepper.
4. Spread evenly over tilapia. Sprinkle with breadcrumbs and drizzle with butter.
5. Bake for 20-25 mins or until fish flakes with a fork.

Beef Tips
INGREDIENTS:
1 package sirloin tips
1/2 cup Dale's sauce, low sodium
2 cups water
PREPARATION:
1. Brown sirloin tips in a skillet.
2. Put the tips in a Crockpot and add Dale's sauce and water.
3. Let cook for 3-4 hours minimum.
4. ENJOY!
**Serve on rice, mashed potatoes, or stir fry veggies
Cream Cheese Taquitos
INGREDIENTS:
2 cups shredded, cooked chicken
1 cup shredded cheese
small flour tortillas
3 oz. cream cheese, room temp.
1/4 cup salsa
1 Tbsp. lime or lemon juice
1/2 tsp. ground cumin
1 tsp. chili powder
2 cloves garlic, minced
1/4 of onion, chopped
salt
cooking spray
*Optional: 3 Tbsp. cilantro
PREPARATION:
1. Preheat oven to 425°F.
2. In large bowl, mix cream cheese, salsa, lime juice, ground cumin, chili powder, onion, and garlic.
3. Add cilantro, if wanted. Then, mix in the shredded chicken and cheese.
4. Soften tortillas in the microwave for 10 seconds.
5. Put mixture in the tortillas and place taquitos seam side down in pan or cookie sheet.
6. Spray the tops of the taquitos lightly with cooking spray and sprinkle with kosher salt.
6. Bake for 15-20 mins or until crisp and golden.
